Baked Salmon with Pea Puree
Although this recipe sounds like something you may find on a fancy restaurant menu, it’s easier to make at home than you might think.
- 6 ounces of Salmon
- 1 cup of Frozen peas
- 1 cup of Fresh mint
Cook salmon over medium heat in a small sauté pan. Boil frozen peas and mint in 1 cup of water for 5 minutes, or until peas are tender but not mushy. Puree peas and mint in water. Remove salmon from heat and drizzle puree over the filet.
