Chicken BLT Salad
Description: You don’t have to wave goodbye to all-American comfort foods like BLT (bacon, lettuce, and tomato) sandwiches on Ignite. This Chicken BLT salad combines the classic flavors and textures of the BLT sandwich into a hearty salad.
- 1 whole chicken breast
- 2 strips of bacon
- 6 whole halved grape tomatoes
- 1 cup of romaine lettuce
- 1/2 whole avocado
- 1 slouse of gluten-free bread
- 1 dash of garlic powder
Toast slice of gluten-free bread until crunchy but not burned. Slice into cubes and set aside. Boil chicken breast in a small saucepan until thoroughly cooked. Remove from water and cube the chicken meat, then set aside. In a small skillet, cook bacon strips on medium high until crunchy but not burned. Remove bacon from pan and place on a paper towel to absorb excess liquid fat. Pat with an additional paper towel if the bacon is extra fatty. In a small bowl, mash avocado with a fork, then add a tbsp. of water and a dash of garlic powder. Whisk together until smooth. In a large bowl, combine chopped romaine lettuce and halved grape tomatoes. Toss cubed chicken meat into the bowl. Add avocado mixture, then stir until salad is coated. Dice bacon into bacon bits and sprinkle onto the salad. Top with bread cubes and serve immediately.
