Chicken Strawberry Spinach Salad
The iron in spinach is unlocked for your body to absorb when you eat it with foods high in vitamin C. We’ve paired spinach with vitamin C-rich strawberries for this juicy salad that will satisfy your sweet tooth without sending your blood sugar sky high.
- 1/3 cup of Sliced strawberries
- 2 cups of Spinach
- 1/4 cup of Walnuts
- 1 whole Chicken thigh
- 1 whole Diced Shallot
- 1 cup of Frisée
- 6 whole Raspberries
- 1/2 teaspoon of White wine vinegar
- 1 tablespoon of Olive oil
Cook chicken thigh on a sauté pan on medium heat for 10 minutes or until cooked thoroughly. Dice chicken and mix into salad with spinach, walnuts, diced shallot, and frisée. Toss with homemade raspberry vinaigrette.
