Raspberry Chicken Salad
This sweet and crunchy salad is juicy enough for folks who like an afternoon treat, but crunchy enough for folks who need a salad with substance.
- 1 whole Chicken thigh
- 2 cups of Lettuce
- 1/4 cup of Cashews
- 1/4 cup of Raspberries
- 1 tablespoon of Dijon mustard
- 1 tablespoon of Olive oil
- 1/2 teaspoon of Apple cider vinegar
Cook chicken thigh on a sauté pan on medium heat for 10 minutes or until cooked thoroughly. Dice chicken and mix into salad with lettuce, raspberries, and cashews. Toss with dressing.
