Sea Salted Dark Chocolate Pistachio Bark
This sweet and salt treat is just enough to get you through a stressful afternoon at work, but low enough in calories and sugar to be Ignite-friendly. Dark chocolate is high in brain satisfying polyphenols and pistachios help maintain healthy blood glucose control thanks to their fiber and healthy fat content.
- 2 tablespoons of crushed pistachio nuts
- 1/4 teaspoon of sea salt
- 2 squares of semi sweet baking chocolate
In a small bowl, melt chocolate squares in the microwave. Line a plate with wax paper and spread a thin layer of coconut oil on the wax paper. Pour the melted chocolate onto the wax paper and spread with the back of a spoon into a rounded square. Make sure to spread the chocolate from the center outward, and keep the chocolate approximately 1 – 2 millimeters thick. Sprinkle sea salt over the top of the chocolate, then sprinkle the crushed pistachios over the top of the chocolate. Gently press the pistachios into the chocolate, but don’t press the pistachios hard so that they touch the wax paper. Place the plate covered in the wax paper and chocolate in the refrigerator to set for about 20 minutes.
