Steak and Bean Corn Tacos
Have a craving for Mexican-style comfort foods? You can still have a filling Tex-Mex style meal without the any of the evil 6 ingredients. These steak and bean corn tacos are great to eat after an intense workout like DBK.
- 4 ounces of flank steak
- 2 whole gluten-free corn tortillas
- 1/4 cup of fat-free refried beans
- 1/2 whole mashed avocado
- 2 tablespoons of salsa
- 1/2 cup of shredded cabbage and carrot slaw
In a large sauté pan over medium heat, cook flank steak on both sides until cooked to your liking. Remove from pan and dice the steak, then set aside. In a small saucepan, heat fat-free refried beans on medium low, stirring constantly until hot. Assemble tacos by spreading beans onto the tortillas, then add cubed steak, mashed avocado, vegetable slaw, and top with salsa.
