Turkey Shiitake Meatballs
This high protein meal includes immune boosting shiitake mushrooms. Make these ahead of time and freeze them, and reheat as needed for a convenient meal.
- 1/4 cup of Almond flour
- 6 ounces of Ground turkey
- 1/4 cup of Diced Shiitake mushrooms
- 1/4 cup of Diced yellow onion
- 1 cup of Marinara sauce
- 1 whole Egg white
- 1 clove of Garlic
- 1 tablespoon of Olive oil
Preheat oven to 350 degrees Fahrenheit. In a sauté pan, cook onion, garlic, and shiitake mushrooms until mushrooms are tender. Remove from heat and place in a large bowl. Blend with almond flour, ground turkey, and egg white. Divide into thirds and roll into balls. Bake for 15 minutes in a baking dish or until turkey is baked all the way through. Serve with marinara sauce.
