How's it going?!? How are you feeling?
I hear ya! Lots of us weren't brought up in the kitchen, let alone the healthy kitchen. It can feel really daunting to dive in but I think you will enjoy the journey. I find it really cathartic actually. Can you give me an idea of some of your favorite meals and I'll help you tweak them -- making them accessible and healthy?
I would suggest, just roundly, that you try and figure out what cheap proteins you enjoy: mushrooms, edamame, lentils, quinoa, bulgar wheat, beans, chick peas (I buy dried versions of the last two and rehydrate them myself -- way more bang for your buck, but canned beans require no prep are total dinner savers!)
Bulk packages of chicken breasts can really make your dollar go far and you can basically do anything with them. Ground turkey is a good option too.
Why not try a stuffed pepper? It's a totally flexible format for just about any food you might want to add in (plus they can become large meals so lunch the next day is taken care of!)
Here's a sample Stuffed Pepper recipe:
Sautee chopped Garlic and Onions in Extra Virgin Olive Oil.
Add chopped Sundried Tomatoes, frozen Peas, and oodles of baby Spinach (it reduces like crazy), and chopped Mushrooms
Toss with cooked wild rice and lentils
Cut some bell peppers (about 4) in half and lay them on a baking sheet
FIll them up with all that yum above, a la an open faced-sandwich
Top with Parmesan cheese for salty, umami, protein awesomeness
Pop them in the oven at 350 for about 20 minutes, the peppers will soften and everything will gel
Eat! And be proud of yourself!
Like I said this is a super easy format -- use pepper jack cheese and black beans instead of lentils and parmesan and you have something a little more tex mex... the possibilities are endless.
Remember it's all arriving on your plate IN a vegetable so you got a great source of fiber and vitamin C right there!
Vegetables/fruit will help fill you up with fiber and they also just add volume into the equation. Protein is equally important in keeping hunger at bay. Keeping those two aspects in mind can be really helpful when retraining your brain on food. It'll be tastier than you think, promise.
