We knew there had to be a better way to get our summertime licks, so&nbsp;we came up with a simple, low-fat alternative that still has&nbsp;the same feel-good flavor. Made with vanilla wafer cookies and fat-free frozen yogurt, these mini homemade treats are light, refreshing and fun-to-make. Roll them in antioxidant-rich dark chocolate chips for an extra-tempting treat. Put a small scoop of ice cream (about 2 teaspoons) on a cookie; top with another cookie and flatten until filling reaches the cookie edge.<\/li>\n<li>Roll the side of the sandwich in chocolate so it adheres to the ice cream. Place in container or on the tray.
