We make peace with the carbs by using a healthy equation of one-third vegetables, one-third lean protein and one-third whole wheat pasta.<\/p>\n<figure id=\"attachment_24006\" aria-describedby=\"caption-attachment-24006\" style=\"width: 620px\" class=\"wp-caption alignnone\"><img fetchpriority=\"high\" decoding=\"async\" class=\"size-full wp-image-24006\" src=\"https:\/\/cdn-life.dailyburn.com\/life\/wp-content\/uploads\/2014\/01\/10052300\/SesameNoodles_PS_2.jpg\" alt=\"Sesame Noodles\" width=\"620\" height=\"400\" srcset=\"https:\/\/cdn-life.dailyburn.com\/life\/wp-content\/uploads\/2014\/01\/10052300\/SesameNoodles_PS_2.jpg 620w, https:\/\/cdn-life.dailyburn.com\/life\/wp-content\/uploads\/2014\/01\/10052300\/SesameNoodles_PS_2-300x193.jpg 300w\" sizes=\"(max-width: 620px) 100vw, 620px\" \/><figcaption id=\"caption-attachment-24006\" class=\"wp-caption-text\">Photos by Perry Santanachote<\/figcaption><\/figure>\n<p><i>Serves 4<\/i><\/p>\n<p>Prep time: 10 minutes<br \/>\nCook time: 15 minutes<\/p>\n<h3><b>Ingredients<\/b><\/h3>\n<p style=\"padding-left: 30px;\">1\/2 pound whole-wheat spaghetti<br \/>\n1 tablespoon dark sesame oil<br \/>\n3\/4 pound boneless, skinless chicken breasts, cut into 1\/2-inch strips or cubes<br \/>\n1 1\/2 tablespoons grated fresh ginger<br \/>\n3 garlic cloves, minced<br \/>\n3 tablespoons creamy, unsalted peanut butter<br \/>\n1 tablespoon sesame tahini<br \/>\n2 tablespoons honey<br \/>\n2 tablespoons reduced-sodium soy sauce<br \/>\n1 tablespoon rice vinegar<br \/>\n3\/4 teaspoon red pepper flakes<br \/>\n1 cup sliced shiitake mushrooms<br \/>\n1 red bell pepper, seeded and thinly sliced<br \/>\n1 cup snow peas, strings removed<br \/>\n1 large zucchini, halved lengthwise and thinly sliced<br \/>\n3 scallions, sliced thin crosswise<br \/>\n2 tablespoons sesame seeds, toasted<\/p>\n<h3><b>Preparation<\/b><\/h3>\n<ol start=\"1\">\n<li>Bring a large pot of water to a boil, add the pasta; cook until al dente, about 8-10 minutes. Reserve \u00bc cup of the pasta cooking water and drain the pasta in a colander. Rinse under cold running water for a couple minutes to chill the noodles and set aside.<\/li>\n<li>Heat the sesame oil in a large skillet over medium heat. Add the chicken and cook, stirring often, until golden brown on all sides, about 8 minutes. Transfer the chicken to a plate.<\/li>\n<li>Add the ginger and garlic to the pan and cook, stirring often, for 1 minute. Stir in the peanut butter, tahini, honey, soy sauce, vinegar, red pepper flakes and reserved pasta water; cook until creamy, about 2 minutes. Add the mushrooms, bell pepper, snow peas and zucchini; cook until tender, about 2-3 minutes. Stir in the cooked chicken and drained noodles and serve sprinkled with scallions and sesame seeds.<\/li>\n<\/ol>\n<p><img decoding=\"async\" class=\"size-full wp-image-24007 alignnone\"
