Pour in oatmeal, reduce heat to a simmer, and cover. Cook, stirring occasionally, for 20 minutes.<\/li>\n<li>Five minutes before the oatmeal is done, heat the oil in a skillet over medium heat. Add garlic and saut\u00e9 for 1 minute. Add mushrooms, asparagus and thyme and saut\u00e9 until mushrooms soften and release all their moisture, about 5 minutes.<\/li>\n<li>When oatmeal is cooked and creamy, remove from heat and portion it into four bowls. Scoop equal portions of the mushroom-asparagus mixture onto the oatmeal; drizzle it with truffle oil and sprinkle Parmesan on top.<\/li>\n<li>In the same skillet, cook the eggs sunny-side-up. Top each bowl with an egg and season with salt and pepper.
