Add some gluten-free quinoa to bump up the protein count to six grams per serving while still keeping the carbs in check. Top the stuffed tomatoes off with some feta cheese for a satisfying home-cooked meal.<\/p>\n<p><i>Serves 8<\/i><\/p>\n<p>[skinnybox]<\/p>\n<p>Prep time: 15 minutes<br \/>Cook time: 20 minutes<\/p>\n<h3><b>Ingredients<\/b><\/h3>\n<p style=\"padding-left: 30px;\">8 tomatoes with flat bottoms<br \/>1 cup cooked quinoa<br \/>3 cloves garlic, minced or pressed, separated<br \/>1 tablespoon olive oil<br \/>5 cups (6 ounces) baby spinach<br \/>1\/2 cup feta cheese<br \/>10 pitted Kalamata olives, chopped<br \/>Salt and pepper, to taste<\/p>\n<h3><b>Preparation<\/b><\/h3>\n<ol>\n<li>Preheat oven to 375 \u00b0 F. Lightly spray glass cooking dish with olive oil or cooking spray.<\/li>\n<li>Core tomatoes and remove juices and seeds.<\/li>\n<li>Heat olive oil on stove over medium heat. Add spinach until starts to wilt. Add garlic and stir for 1 minute.<\/li>\n<li>In a large bowl, mix spinach, quinoa, olives and feta. Add salt and pepper to taste.<\/li>\n<li>Spoon quinoa mixture into tomatoes, filling to just below the rim.
