Cook for 1 minute each side. Reduce heat to low, cover and cook for 10 minutes. Turn off the heat, do not lift the lid, and let the chicken rest undisturbed for another 10 minutes.<\/li>\n<li>In a medium skillet over high heat. Add the lima beans, squash and corn, season with salt to taste and cook until the squash is just tender, about 2-3 minutes. Add the tomatoes and cook for 2 minutes. Remove from the heat and stir in the lime juice and remaining parsley.<\/li>\n<li>Serve each chicken breast with 1 cup of succotash.<\/li>\n<\/ol>\n<p><em>Need more light and tasty summer recipes?
