Here, it\u2019s tossed with the <a href=\"https:\/\/dailyburn.com\/life\/recipes\/greek-salad-skewer-recipe\/\" target=\"_blank\">flavors of Greece<\/a> using fresh tomatoes and cucumbers straight from the garden. Serve this salad at a <a href=\"https:\/\/dailyburn.com\/life\/recipes\/healthy-skewer-recipes\/\" target=\"_blank\">backyard barbecue<\/a> or pack it for a satisfying lunch at work. It won\u2019t disappoint! (Note: for a gluten-free or vegan option, substitute equal parts quinoa for bulgur and leave out the feta cheese.)<\/p>\n<figure id=\"attachment_30632\" aria-describedby=\"caption-attachment-30632\" style=\"width: 620px\" class=\"wp-caption alignnone\"><img fetchpriority=\"high\" decoding=\"async\" class=\"size-full wp-image-30632 \" title=\"Bulghur Greek Salad Recipe\" alt=\"Bulghur Greek Salad Recipe\" src=\"https:\/\/cdn-life.dailyburn.com\/life\/wp-content\/uploads\/2014\/08\/10045858\/Bulghur-Salad_RB_2.jpg\" width=\"620\" height=\"400\" srcset=\"https:\/\/cdn-life.dailyburn.com\/life\/wp-content\/uploads\/2014\/08\/10045858\/Bulghur-Salad_RB_2.jpg 620w, https:\/\/cdn-life.dailyburn.com\/life\/wp-content\/uploads\/2014\/08\/10045858\/Bulghur-Salad_RB_2-300x193.jpg 300w\" sizes=\"(max-width: 620px) 100vw, 620px\" \/><figcaption id=\"caption-attachment-30632\" class=\"wp-caption-text\">Photo by Renee Blair<\/figcaption><\/figure>\n<h3>Bulgur Greek Salad Recipe<\/h3>\n<p><em>Yields approximately 9 cups<\/em><br \/><em>Serves 6<\/em><\/p>\n<p>Prep time: 30 minutes<br \/>[skinnybox]<\/p>\n<h3>Ingredients<\/h3>\n<p style=\"padding-left: 30px;\">1 cup uncooked bulgur wheat<br \/>1 1\/2 cups boiling water<br \/>1 chopped medium cucumber (about 2 cups chopped)<br \/>1 1\/2 cups chopped tomatoes<br \/>1\/4 cup pitted and halved kalamata olives,<br \/>half of a red onion, finely chopped (1 cup chopped)<br \/>1 tablespoon chopped fresh oregano<br \/>salt and pepper to taste<br \/>1\/2 cup feta cheese, crumbled<br \/>mixed salad greens for serving<\/p>\n<p style=\"padding-left: 30px;\"><em>For the dressing:<\/em><br \/>1 garlic clove, finely chopped<br \/>juice and zest of 1 lemon<br \/>1\/4 cup olive oil<br \/>1\/4 tsp sea salt<\/p>\n<h3>Preperation<\/h3>\n<ol>\n<li>Prepare the bulgur. In a large mixing bowl, combine the bulgur and the boiling water. Cover with a large dinner plate and let sit 30 minutes, or until all water is absorbed.<\/li>\n<li>While the bulgur sits, prepare the cucumber, tomatoes, olives, onion and oregano. Set aside.<\/li>\n<li>Combine the dressing ingredients in a small bowl and whisk well. Set aside.<\/li>\n<li>When the water is absorbed from the bulgur, add the dressing and stir well to combine. Then, add the prepped vegetables and feta cheese and toss gently again to combine.
