Let sit until it comes to room temperature, about 30 minutes.<\/li>\n<li>In the meantime, place quinoa in a medium pot with 2 cups of water. Bring to a boil then reduce heat to low and simmer uncovered until quinoa is tender and has absorbed all the liquid, about 12-15 minutes.<\/li>\n<li>Heat a cast iron skillet over high heat and add 1 teaspoon of the oil. Add the steak and sear for 4 minutes per side. Let rest on a cutting board for 5 minutes before slicing it into thin strips against the grain.<\/li>\n<li>Whisk the lemon juice, remaining 1 tablespoon oil and remaining 1\/2 teaspoon salt together in a large bowl.
