In a medium bowl, toss together tomatoes, 1 tablespoon olive oil, vinegar, sugar, salt and pepper. Transfer to a baking sheet and bake until soft and slightly caramelized, 25-30 minutes.<\/li>\n<li>In a medium mixing bowl, combine garlic powder, dried herbs and turmeric. Crumble the tofu in the bowl and mix to combine. Set aside.<\/li>\n<li>Heat a large skillet over medium heat. Add remaining 1 tablespoon oil and saut\u00e9 the onion until it\u2019s soft and translucent, about 4 minutes. Add zucchini, bell pepper and mushrooms; cook until tender, about 5 minutes.
