These chipotle-flavored stuffed sweet potatoes are under 300 calories each, plus they&#8217;re loaded with protein-rich black beans, corn and pepper. Want to save time before your <a href=\"https:\/\/dailyburn.com\/life\/recipes\/healthy-super-bowl-recipes\/\" target=\"_blank\" rel=\"noopener\">Super Bowl party<\/a>? Make your stuffed sweet potatoes without the creamy chipotle sauce a few days in advance, then reheat and drizzle with sauce right before kick off. Once hot, add sweet pepper and garlic, saut\u00e9 until pepper is soft.<\/li>\n<li>Add in red cabbage, corn and black beans. Cook for five to six minutes.<\/li>\n<li>Remove and place in a bowl with chopped cilantro and lime juice. Add salt and pepper to taste.<\/li>\n<li>Cut sweet potatoes in half and scoop out orange flesh, keeping a thin layer of flesh against the skin so the skins don\u2019t fall apart.<\/li>\n<li>Mash the orange flesh and mix with black bean and cabbage mixture.<\/li>\n<li>Stuff your mixture <a class=\"wpil_keyword_link\" href=\"https:\/\/dailyburn.com\/life\/fitness\/no-equipment-back-exercises\/\"   title=\"back\" data-wpil-keyword-link=\"linked\"  data-wpil-monitor-id=\"642\">back<\/a> inside the sweet potato skins. Sprinkle cheese on top and bake for 10 minutes or until cheese is melted.<\/li>\n<li>Next, whisk together all ingredients for chipotle sauce\u00a0or combine\u00a0in a blender and process until thoroughly mixed.<\/li>\n<li>Remove sweet potatoes and drizzle on the chipotle sauce.
