But the violet vegetable is slightly less starchy than sweet potato with 37 grams of carbohydrates per one-cup serving versus 41 grams of carbohydrates in one cup of sweet potato. (To their credit, sweet potatoes are slightly higher in fiber, with 6.6 grams to ube\u2019s five grams per cup.)<\/p>\n<p>\u201cLike yams, [ube] is rich in potassium, and its vibrant purple color is an indication that it\u2019s loaded with anthocyanins, a type of polyphenol that is promising for helping reverse age-related declines in cognitive and motor function,\u201d says <a href=\"https:\/\/www.franceslargemanroth.com\/\" target=\"_blank\" rel=\"noopener\">Frances Largeman-Roth<\/a>, RD, author of <a href=\"https:\/\/www.amazon.com\/Eating-Color-Delicious-Healthy-Recipes\/dp\/1617690295\/ref=sr_1_2?s=books&amp;ie=UTF8&amp;qid=1369856978&amp;sr=1-2&amp;keywords=largeman-roth\" target=\"_blank\" rel=\"noopener\"><em>Eating in Color: Delicious, Healthy Recipes for You and Your Family<\/em><\/a>.<\/p>\n<p>A cup of ube provides 20 percent of your daily needs for potassium, essential mineral for <a href=\"https:\/\/dailyburn.com\/life\/health\/gut-health-essential-nutrients-better-sleep\/\" target=\"_blank\" rel=\"noopener\">getting better sleep<\/a> and stabilizing blood pressure levels. To be exact, 160 calories per cup, Largeman-Roth says. Also, be sure to use the actual tuber \u2014 not the powders, jams and other processed products that you commonly find in Asian markets. Those can be packed with added sugars and preservatives.<\/p>\n<p>\u201cYou can cook ube like yams by boiling or baking them. Then you can mix the cooked vegetable into various dishes, either savory or sweet,\u201d Largeman-Roth says.<\/p>\n<p>Paleo and vegan devotees are preparing ube as filling side dishes, spreads and desserts. In fact, it\u2019s starting to be introduced by many Paleo food bloggers. \u201cPaleo-style would be to puree it into a sauce and serve it with grilled fish,\u201d Largeman-Roth says. You can also dice it, boil it and use it in a salad with lentils for a vegan dish.&nbsp;Or, enjoy it as mashed potato or a <a href=\"https:\/\/dailyburn.com\/life\/recipes\/sweet-potato-soup-fat-free-recipe\/\" target=\"_blank\" rel=\"noopener\">soup puree<\/a>, fold it into a breakfast muffin mixture or julienne it into <a href=\"https:\/\/dailyburn.com\/life\/recipes\/healthy-homemade-french-fries-recipes\/\" target=\"_blank\" rel=\"noopener\">baked fries<\/a>.
