Cookbook<\/a><\/em><\/p>\n<p>If you\u2019re still not making your own <a href=\"https:\/\/dailyburn.com\/life\/recipes\/black-bean-hummus-recipe\/\" target=\"_blank\">hummus<\/a> from scratch, then this recipe will get you hooked. The color alone will lure your guests to the table. Then you can tell them your hummus is made with purple tulips \u2014 or let them in on the real secret. Plan ahead and simply wrap a beet in foil and toss it in the oven with whatever else you\u2019re cooking. Eat Slow.\u00a0<\/em><\/a><\/p>\n<h2>Don\u2019t Get Beet Hummus Recipe<\/h2>\n<p><em>Makes 2 cups<\/em><\/p>\n<h3 style=\"padding-left: 30px;\">Ingredients<\/h3>\n<p style=\"padding-left: 30px;\">1 can (15 ounces) chickpeas, rinsed and drained, or 11\u20442 cups cooked<br \/>\n1 medium beet, roasted (see page 29), peeled, and quartered<br \/>\n1 clove garlic<br \/>\n2 tablespoons tahini<br \/>\n3 tablespoons fresh lemon juice<br \/>\n1\/4 cup extra-virgin olive oil<br \/>\n3\/4 teaspoon fine sea salt<br \/>\nOptional garnishes: chopped cilantro, flaky sea salt, olive oil<\/p>\n<h3>Preparation<\/h3>\n<ol>\n<li>In a food processor or high-speed blender, combine the chickpeas, beet, garlic, tahini, lemon juice, olive oil and salt. Process on high until smooth, stopping as needed to scrape down the sides and underneath the blade with a rubber spatula.<\/li>\n<li>Transfer to a small serving bowl and garnish with chopped cilantro, flaky sea salt and\/or a drizzle of olive oil (if desired).
