Steaming<\/h3>\n<p>This technique (best for veggies and <a href=\"https:\/\/dailyburn.com\/life\/recipes\/healthy-lobster-rolls-fish-tacos-recipes\/\" target=\"_blank\" rel=\"noopener noreferrer\">seafood<\/a>) helps bring out the food\u2019s pure flavors, says Wells. \u201cSteaming fresh corn on the cob, for instance, uses up much less fuel and time than boiling,\u201d she says. \u201cAnd rather than serving up a limp, waterlogged vegetable,&nbsp;you can enjoy fresh corn that is bright, firm and full of vitamin-rich fresh flavor.\u201d Fish, like cod, flounder or shellfish cook up fast and absorb flavor better when you steam \u2018em, too, especially if you do so over a bed of <a href=\"https:\/\/dailyburn.com\/life\/recipes\/herb-infused-cooking-oils-recipes\/\" target=\"_blank\" rel=\"noopener noreferrer\">fresh herbs<\/a>, like rosemary.<\/p>\n<p><strong>Simple Steps: <\/strong>In a medium saucepan, bring water to a simmer or boil. Place the steamer over the pan, your food in the steamer and let set for a few minutes. Blanch \u2018em. Blanching veggies makes them tender yet crisp so they add some more bite to your dish. This method requires you to cook foods (particularly green beans, peas or asparagus) in boiling water with salt for about two to seven minutes. Then, you immediately stop the cooking by putting them in an ice bath or running them under cold <a href=\"https:\/\/dailyburn.com\/life\/health\/drinking-lemon-water-benefits-weight-loss\/\" target=\"_blank\" rel=\"noopener noreferrer\">water<\/a>. \u201cThis maintains \u2014 even intensifies \u2014 the vegetable\u2019s brilliant green color,\u201d says Wells, who often does this with veggies before adding to <a href=\"https:\/\/dailyburn.com\/life\/recipes\/mason-jar-salads-recipes-healthy-lunch-ideas\/\" target=\"_blank\" rel=\"noopener noreferrer\">salads<\/a>.<\/p>\n<p><strong>Simple Steps: <\/strong>Fill a large pot with water. Add one tablespoon of coarse <a href=\"https:\/\/dailyburn.com\/life\/health\/salt-guide-daily-sodium-intake\/\" target=\"_blank\" rel=\"noopener noreferrer\">sea salt<\/a> per quart of H2O and bring it to a boil. Toss in your produce and let it come to a boil again. Allow the veggies to cook until they brighten, then drain the boiling water and immediately rinse the produce in ice cold water.<\/p>\n<p><strong>Master Chef Tips: <\/strong>Avoid blanching green veggies for more than seven minutes and don\u2019t cover the pot, as this can lead to duller colors. You want the water to return to a boil as quickly as possible after adding the veggies, so keep the heat turned up.<\/p>\n<p><strong>Must-Get Gadget: <\/strong>\u201cMy go-to tool for blanching is a classic pasta pot, fitted with its own colander,\u201d says Wells. After blanching the veggies, \u201cjust separate the colander from the pot and plunge it into an ice bath. Poaching <strong>&nbsp;<\/strong><\/h3>\n<p>When you\u2019re looking to dish up delicate foods, like <a href=\"https:\/\/dailyburn.com\/life\/recipes\/how-to-cook-salmon-recipes\/\" target=\"_blank\" rel=\"noopener noreferrer\">fish<\/a>, fruits, eggs or even poultry, poaching (also known as sous vide) might be your best bet, says Wells. (She loves poaching <a href=\"https:\/\/dailyburn.com\/life\/recipes\/healthy-chicken-breast-recipes\/\" target=\"_blank\" rel=\"noopener noreferrer\">chicken<\/a> breasts, which make them super tender.) This involves submerging foods in water or a flavored liquid and cooking them at a low temperature \u2014 below what you\u2019d do for blanching, boiling or simmering. \u201cPoached fruits are one of my favorite <a href=\"https:\/\/dailyburn.com\/life\/recipes\/health-boosting-elderberry-recipes\/\" target=\"_blank\" rel=\"noopener noreferrer\">desserts<\/a> and a method that always receives waves of welcome from guests,\u201d Wells says. \u201cDuring almost any season, fruits such as pears, apricots, cherries or <a href=\"https:\/\/dailyburn.com\/life\/recipes\/peach-homemade-greek-yogurt-recipe\/\" target=\"_blank\" rel=\"noopener noreferrer\">peaches<\/a> benefit from the poaching method.\u201d Poach these fruits in a sugar syrup, Wells says, and flavor with spices like cinnamon, vanilla or cardamom.<\/p>\n<p><strong>Simple Steps: <\/strong>Heat water to about 160 to 180 degrees Fahrenheit for everything you poach, remembering that most foods should be done in less than 10 minutes. Once you hit that temperature, add your about-to-be poached food and keep an eye on the water so it stays on the verge of simmering.<\/p>\n<p><strong>Master Chef Tips: <\/strong>The key to making the perfect poached egg or fruit is keeping the temperature constant and never letting your water reach a high temp.<\/p>\n<p><strong>Must-Get Gadgets: <\/strong>A heat diffuser can tame your stovetop flame and keep liquid at the right temp. Braising<\/h3>\n<p>One of Wells\u2019 favorite techniques \u2014 and a method other&nbsp;cooks often overlook \u2014 involves searing meat over high heat to create a crispy crust, then letting it cook slowly in stock with tomatoes and herbs. This is known as braising. \u201cMy favorite braising is done with meats and poultry with lots of <a href=\"https:\/\/dailyburn.com\/life\/health\/collagen-superfood-health-benefits\/\" target=\"_blank\" rel=\"noopener noreferrer\">collagen<\/a>-containing connective tissues, such as bone-in pork loin, beef, lamb shoulder or chicken thighs and drumsticks,\u201d Wells says. \u201cOnce the ingredients have been properly seared in a bit of fat [like <a href=\"https:\/\/dailyburn.com\/life\/recipes\/herb-infused-cooking-oils-recipes\/\" target=\"_blank\" rel=\"noopener noreferrer\">oil<\/a>], I add braising liquid \u2014 usually stock or <a href=\"https:\/\/dailyburn.com\/life\/recipes\/healthy-recipes-cooking-with-wine\/\" target=\"_blank\" rel=\"noopener noreferrer\">wine<\/a> or a combination of the two \u2014 and&nbsp;cook&nbsp;either in the oven or on top of the stove until tender.\u201d<strong>&nbsp;<\/strong><\/p>\n<p><strong>Simple Steps: <\/strong>Use a bit of oil in a pan to sear all sides of your meat of choice. Remove the meat from the pan and add your sauce ingredients, then add the meat back and put the pan&#8217;s lid on top. Allow the meat to braise for a few hours, adding more liquid when you need it.<strong>&nbsp;<\/strong><\/p>\n<p><strong>Master Chef Tips: <\/strong>To make a restaurant-quality braised meat, you want to liquefy the collagen, which occurs at about 160 degrees Fahrenheit, says Wells. Cook bone side down to stabilize the meat on the pan and avoid letting the liquid boil. Make sure to taste it along the way. You\u2019ll know it\u2019s ready if you can basically cut your food with a spoon.<\/p>\n<p><strong>Must-Get Gadgets: <\/strong>You\u2019ll want a cat iron pan with a lid for this method.
