But lately the sheer variety of types can be overwhelming. And we&#8217;re not just talking brown versus white. Forbidden Rice<\/h3>\n<p>Also known as black or purple rice, <a href=\"https:\/\/modernfarmer.com\/2015\/10\/what-is-black-rice\/\" target=\"_blank\" rel=\"noopener noreferrer\">forbidden rice<\/a>\u00a0originates from Japan and gets its color from the same antioxidant that gives blueberries, <a href=\"https:\/\/dailyburn.com\/life\/recipes\/savory-acai-recipes\/\">acai<\/a> and eggplant their dark hues. According to Hill, it\u2018s, &#8220;slightly sweet and nutrient-dense from antioxidants and has more fiber and protein than other rice varieties.&#8221; Indeed, researchers have found that the forbidden kind\u00a0<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/22708681\" target=\"_blank\" rel=\"noopener noreferrer\">has more antioxidants<\/a> than brown. The black variety\u2019s antioxidants can help <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/11340093\" target=\"_blank\" rel=\"noopener noreferrer\">reduce arterial plaque buildup<\/a> and <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/22872372\" target=\"_blank\" rel=\"noopener noreferrer\">lower cholesterol<\/a>, says Hill. Red Rice<\/h3>\n<p>Similar to the forbidden kind, its <a href=\"https:\/\/www.huffingtonpost.com\/ornish-living\/make-the-switch-why-brown_b_8304558.html\" target=\"_blank\" rel=\"noopener noreferrer\">red cousin<\/a> gets its hue from the same antioxidants and has 10 times the antioxidants of brown. Sometimes called <a href=\"https:\/\/www.lotusfoods.com\/index.php\/products\/whole-grain-products\/bhutan-red-rice\/\" target=\"_blank\" rel=\"noopener noreferrer\">Bhutanese red rice<\/a>, this crimson variety is also rich in minerals, like potassium and <a href=\"https:\/\/dailyburn.com\/life\/health\/magnesium-deficiency-symptoms\/\" target=\"_blank\" rel=\"noopener noreferrer\">magnesium<\/a>, and cooks quickly (just 20 minutes, compared to 35-plus for brown). Brown Rice<\/h3>\n<p>While forbidden and red refer to specific types of the grain, brown rice is a broad label for varieties that are unhulled. Every kind of white rice you can think of \u2014 from jasmine to short-grain \u2014 is brown \u00a0<em>first<\/em> before its outer hull is removed. The bran \u2014 or outside layer \u2014 of rice contains <a href=\"https:\/\/www.health.state.mn.us\/divs\/hpcd\/chp\/cdrr\/nutrition\/facts\/wholegrains.html\" target=\"_blank\" rel=\"noopener noreferrer\">most of its vitamins and minerals<\/a> and some of its fiber. Removing the bran changes the nutrient profile. Some <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC3996977\/\" target=\"_blank\" rel=\"noopener noreferrer\">research<\/a> has suggested that whole-grain varieties can lead to healthier blood sugar levels.<\/p>\n<p>But <a href=\"https:\/\/www.muscleforlife.com\/brown-rice-vs-white-rice\/\">contrary to popular belief<\/a>, white rice isn&#8217;t <em>significantly<\/em> more carb-rich and nutrient-poor than the brown kind. The unhulled version just has more <a href=\"https:\/\/dailyburn.com\/life\/health\/eat-healthy-fat-less-sugar\/\">healthy fats<\/a> and minerals than white. White Rice<\/h3>\n<p>White rice are <a href=\"https:\/\/www.riceassociation.org.uk\/content\/1\/10\/varieties.html\">divided into two groups<\/a>: all-purpose and specialty. The all-purpose kind, like long grain or quick cook, are interchangeable in any dish. Specialty rice, on the other hand, are best suited for ethnic cuisines, according to the Rice Association. It\u2019s also is often grown, cooked and eaten in the same location (sustainability for the win). &#8220;My favorites based on their flavor and texture are jasmine and basmati,&#8221; Hill says. &#8220;They have a beautiful texture and are light and fluffy with a subtle flavor.&#8221;<\/p>\n<p><strong>RELATED: <\/strong><a href=\"https:\/\/dailyburn.com\/life\/health\/best-diy-flours-gluten-free-baking\/\">The Best DIY Flours for Gluten-Free Baking<\/a><\/p>\n<p>Here are <a href=\"https:\/\/www.finecooking.com\/articles\/guide-to-rice.aspx\">a few specialty ones<\/a> to know:<\/p>\n<ul>\n<li><strong>Basmati:<\/strong> Used in Indian and Pakastani cuisine, basmati has a slightly nutty flavor and very long grains.<\/li>\n<li><strong>Jasmine:<\/strong> Aromatic like basmati, jasmine is the choice in Thai cooking.<\/li>\n<li><strong>Sticky rice:<\/strong> Usually called Japanese or sushi rice, this glutinous sticky variety is used for sushi and other Asian dishes.<\/li>\n<li><strong>Bomba or paella:<\/strong> A staple in Spanish cuisine, it absorbs a lot of water without getting sticky. Its absorption of cooking broth helps give paella its flavor and color.<\/li>\n<li><strong>Arborio:<\/strong> Used to make Italian risotto (carnaroli is another popular choice), this rice gives risotto its creamy texture.<br \/>\n<strong>Try it:\u00a0<\/strong><a href=\"https:\/\/pinchofyum.com\/brown-butter-scallops-parmesan-risotto\" target=\"_blank\" rel=\"noopener noreferrer\">Brown Butter Scallops with Parmesan Risotto<\/a><\/li>\n<\/ul>\n<p>Good new about the white variety:\u00a0&#8220;Your life and nutrition should offer flexibility and balance, just as much as it contains highly nutrient-dense foods,&#8221; says Hill. &#8220;My rule of thumb or recommendation is to enjoy any variety with <a href=\"https:\/\/dailyburn.com\/life\/health\/best-vegan-protein-powders\/\">protein<\/a>, healthy fats and plenty of vegetables to help stabilize your blood sugars throughout the day.&#8221;<\/p>\n<p>If you&#8217;re cooking an ethnic dish that calls for a specific type of white rice, go for it!
