Coscarelli rose to culinary stardom when she co-founded by CHLOE, a chain of <a href=\"https:\/\/dailyburn.com\/life\/health\/fast-food-chains-healthy-menus\/\" target=\"_blank\" rel=\"noopener\">fast-casual<\/a> vegan restaurants, which has expanded across the U.S. and now, Europe. Some would say Coscarelli\u2019s menu brought veganism to the masses, transforming the pork in tacos into spicy seitan chorizo and Italian meatballs into Portobello balls of veggie goodness.<\/p>\n<p>But after some legal battles with her co-founder, Coscarelli parted ways with the by CHLOE chain in March 2017. A year later, Coscarelli pens her most personal cookbook yet, sharing the plant-based confections she\u2019s cooked for her family, friends and boyfriend in her New York City apartment.<\/p>\n<p>From cinnamon roll pancakes to cauliflower \u201cbuffalo\u201d wings, prepare to give your tummy and taste buds a delight. Daily Burn had the chance to sneak behind the counter to speak with Coscarelli, as she was preparing to feed more than 300 dinner guests at the South Beach Food &amp; Wine Festival. Here are her top tips for preparing the most flavorful vegan meals \u2014 plus three recipes you can make at home.<\/p>\n<p><strong>RELATED: <\/strong><a href=\"https:\/\/dailyburn.com\/life\/health\/vegan-diet-plan-questions\/\" target=\"_blank\" rel=\"noopener\">3 Questions to Ask Yourself Before Going Vegan<\/a><\/p>\n<h2>5 Foolproof Tips for Delicious Vegan Cooking<\/h2>\n<h3>1.\u00a0Go raw to balance your meals.<\/h3>\n<p>While the latest diet trends have gotten many people on board with the ketogenic train or even the <a href=\"https:\/\/dailyburn.com\/life\/health\/pegan-diet-paleo-vegan\/\" target=\"_blank\" rel=\"noopener\">pegan diet<\/a> (paleo-vegan), Coscarelli says going vegan is one of the best ways to get a healthy, <a href=\"https:\/\/dailyburn.com\/life\/health\/clean-eating-tips-mistakes\/\" target=\"_blank\" rel=\"noopener\">balanced meal<\/a>. In her new cookbook, finding the right balance of flavor and nutrition in every recipe is essential. \u201cTo make a complete meal, I like to include various components that add up to a nourishing and satisfying feel,\u201d Coscarelli says. \u201cFor example, I always like some part of the plate to be fresh and raw, whether it\u2019s mixed greens, a bed of kale, fresh salsa on a taco, or crisp lettuce, tomato and onion on a veggie burger,\u201d she adds. Add bulk with fiber.<\/h3>\n<p>When it comes to vegan meat substitutes, taste and texture are key. Coscarelli loves to play with different plant-based ingredients to get a similar consistency and flavor as non-vegan foods. Veg out.<\/h3>\n<p>Vegetables are the main food group for vegans, so it\u2019s no surprise that it\u2019s a major component even in the <a href=\"https:\/\/dailyburn.com\/life\/recipes\/healthy-dinner-recipes-meatless-monday\/\" target=\"_blank\" rel=\"noopener\">heartiest dishes<\/a>. \u201cMy favorite way to cook veggies is roasting them in a hot oven to bring out their natural sweetness. I can\u2019t resist the caramelization that takes place. They\u2019re delicious as is, or pureed and added to sauces,\u201d Coscarelli says. Coscarelli\u2019s <a href=\"https:\/\/dailyburn.com\/life\/recipes\/vegan-meatball-parm-recipe\/\" target=\"_blank\" rel=\"noopener\">Meatball Parm recipe<\/a> (picted above) uses <a href=\"https:\/\/dailyburn.com\/life\/recipes\/healthy-beet-recipes\/\" target=\"_blank\" rel=\"noopener\">roasted beets<\/a>, seitan and brown rice to give the meatballs a robust texture. Say (cashew) cheese.<\/h3>\n<p>Being part Italian, Coscarelli enjoys <a href=\"https:\/\/dailyburn.com\/life\/health\/healthy-pasta-gluten-free\/\" target=\"_blank\" rel=\"noopener\">pasta<\/a> so much that there\u2019s an entire chapter dedicated to noodle dishes in her cookbook. \u201cWhen I test a pasta sauce, I\u2019m looking for the right consistency and texture. I don\u2019t want anything that will be clumpy, pasty or dry,\u201d Coscarelli says. \u201cI love using cashews because they make the creamiest vegan sauces. If you\u2019re making a nut-based sauce like a cashew cream, it\u2019s important to warm it at a lower temperature so that it doesn\u2019t dry out.\u201d<\/p>\n<p>Another pro tip is to use nutritional yeast flakes to add flavor to your \u201ccheese.\u201d Coscarelli uses it to prepare <a href=\"https:\/\/dailyburn.com\/life\/recipes\/vegan-mac-and-cheese-recipe\/\" target=\"_blank\" rel=\"noopener\">macaroni and cheese<\/a>. In her <a href=\"https:\/\/dailyburn.com\/life\/recipes\/sriracha-tempeh-alfredo-recipe\/\" target=\"_blank\" rel=\"noopener\">Sriracha Tempeh Alfredo recipe<\/a> (pictured above), she combines cashew cheese with garlic, Sriracha and maple syrup to mimic the savory and slightly tastes in an Alfredo sauce. To enhance the flavor of pasta sauces, Coscarelli adds dried herbs instead of fresh. Treat yo\u2019self.<\/h3>\n<p>No meal is complete without dessert, even vegan ones. The <em>Cupcake Wars<\/em>-winning chef is known for her mouthwatering sweets, and her cookbook is filled with dairy-free cupcakes, donuts, pies and <a href=\"https:\/\/dailyburn.com\/life\/recipes\/healthy-homemade-ice-cream-recipes\/\" target=\"_blank\" rel=\"noopener\">ice cream<\/a>. Her trick for replacing eggs: \u201cVinegar is key! In baking, you can replace eggs with a mix of vinegar and baking soda, which reacts together to bind cakes and cupcakes without using eggs.\u201d Coscarelli often uses <a href=\"https:\/\/dailyburn.com\/life\/health\/apple-cider-vinegar-for-weight-loss\/\" target=\"_blank\" rel=\"noopener\">apple cider vinegar<\/a> in her desserts not only as a binding agent, but also for its balance of flavors. Instead of butter or margarine, Coscarelli swaps in healthy fats, like avocado and coconut oil. Her chocolate-avocado cupcakes recipe combines avocado with coconut oil, confectioners\u2019 sugar, vanilla extract and almond milk for the frosting.<strong><em>\u00a0<\/em><\/strong><\/p>\n<p><strong><em>Want more flavorful vegan recipes?
