Ice cream sandwiches are the ultimate summertime treat, but just one can set you back 220 calories or more. So we came up with a simple, low-fat alternative that doesn’t skimp on flavor. Made with your choice of thin cookies and fat-free frozen yogurt, these homemade mini-sandwiches are light, refreshing and fun-to-make. Customize them with sweet and spicy “toppings,” such as chopped fruit and nuts or candied ginger, for a treat that suits anyone’s sweet tooth.

Mini Frozen-Yogurt Sandwiches Recipe

Yields 4

Prep time: 10 minutes
Cook time: 1 hour

Ingredients

1/2 cup fat-free vanilla frozen yogurt, slightly softened
8 thin cookies, such as Anna’s Thins or Trader Joe’s Cookies Thins
1 ounce dried fruit, nuts, trail mix or candied ginger, chopped

Preparation

  1. Line a freezer-friendly plate with plastic wrap.
  2. Put a scoop of frozen yogurt (about 2 tablespoons) on a cookie; top with another cookie and flatten until filling reaches the cookie edge.
  3. Roll the side of the sandwich in the fruit and nut mixture or candied ginger to adhere to the ice cream. Place on the plate. Repeat with remaining ingredients.
  4. Place in the freezer to set for at least 1 hour, or individually wrap and freeze for up to 1 week.

Pro Tip

Freeze the sandwiches as you make them. Frozen yogurt melts fast!
