Mini Frozen-Yogurt Sandwiches Recipe
Yields 4
Prep time: 10 minutes
Cook time: 1 hour
Ingredients
1/2 cup fat-free vanilla frozen yogurt, slightly softened
8 thin cookies, such as Anna’s Thins or Trader Joe’s Cookies Thins
1 ounce dried fruit, nuts, trail mix or candied ginger, chopped
Preparation
- Line a freezer-friendly plate with plastic wrap.
- Put a scoop of frozen yogurt (about 2 tablespoons) on a cookie; top with another cookie and flatten until filling reaches the cookie edge.
- Roll the side of the sandwich in the fruit and nut mixture or candied ginger to adhere to the ice cream. Place on the plate. Repeat with remaining ingredients.
- Place in the freezer to set for at least 1 hour, or individually wrap and freeze for up to 1 week.
