Turkey Sausage and Kale Frittata Recipe

Ingredients
5 large eggs
1 cup egg whites
3/4 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons chopped oregano
2 tablespoons olive oil, divided
8 ounces turkey sausage, removed from the casing and crumbled
1 pound (about 4) red potatoes, sliced thin
3 cups chopped kale
3/4 cup cherry tomatoes, halved
1 clove garlic, crushed
Salt and pepper to taste
Preparation
- Preheat oven to 375° F. In a large bowl, whisk together the first 6 ingredients (through oregano).
- Heat 1 tablespoon of olive oil in a 10-inch cast-iron skillet over medium-high heat. Add sausage and cook until browned. Transfer to a plate and set aside. Heat the remaining 1 tablespoon oil in the skillet over medium heat. Place potatoes in the skillet, cover, and cook, stirring occasionally, until tender but firm, about 10 minutes. Add kale, tomatoes and garlic. Continue cooking for 3 minutes, until kale is wilted. Season with salt and pepper to taste. Stir in sausage and pour in egg mixture. Swirl to distribute, but do not stir.
- Transfer to the oven and bake until set, about 15 minutes. Cut into 4 wedges.
