Vegan Cauliflower Alfredo Sauce Recipe

We all love a deliciously creamy Alfredo dish once in a while, but the average sauce can easily pack 1,000 calories in a single serving. So in this recipe, we swapped the cream, cheese and butter for steamed cauliflower and nutritional yeast — a vegan source of B vitamins, protein and fiber. Nutritional yeast has a similar flavor to sharp cheddar, so you get all cheesy goodness without the calories. Best of all, this cauliflower Alfredo sauce is just five ingredients and takes less then 15 minutes to prepare. That’s faster than it would take to get it at your favorite Italian restaurant.

Vegan Cauliflower Alfredo Sauce Recipe

Serves 3

Prep time: 15 minutes

Ingredients

1 small head cauliflower
1/2 cup nutritional yeast
2/3 cup almond milk
Juice from half a lemon
2 cloves garlic
1/4 teaspoon salt
1 tablespoon chopped fresh parsley
2 cups pasta of choice

Preparation

  1. Cut the head of cauliflower into florets. Place the florets in a pot and cover with water. Bring to a boil and allow them to cook for approximately five minutes until the cauliflower is tender. Drain.
  2. Place the cooked cauliflower in a blender along with the nutritional yeast, almond milk, lemon juice, two cloves of crushed garlic and salt. Blend until smooth.
  3. Top cooked gluten-free pasta, zucchini noodles or spaghetti squash with the sauce and sprinkle with chopped fresh parsley before serving.
