Carmen is a Canadian who moved to London, England after graduating from university. She has had a passion for cooking from a young age. Two years ago Carmen was diagnosed with a chronic auto immune disease and prescribed strong medication with horrible side effects including hair loss, insomnia and a weakened immune system. Instead of relying on pills, Carmen adopted a diet free from grains, gluten, starch, lactose, soy, processed foods and refined sugar and has been healthy ever since.
