Cashew Cream and Fruit Parfait Recipe

Cashew cream is the perfect vegan substitute for heavy dairy full variety. It looks and tastes nearly like the real thing and has the added bonus of being higher in protein. Spoon it over a cup of berries for a pure guilt-free decadent fruit parfait. You won’t even remember that calorie-laden frozen yogurt exists.

Cashew Cream and Fruit Parfait Recipe

Serves 4

The Skinny

Per 3/4-cup serving:

  • 217 cal
  • 13 g fat (2 g sat)
  • 21.6 g carbs
  • 59 mg sodium
  • 2.6 g fiber
  • 12 g sugar
  • 5 g protein

Ingredients

1 cup raw cashews
1/4 cup cold water
1 tablespoon maple syrup
1 teaspoon lemon zest
1/4 teaspoon vanilla extract
Pinch fine sea salt
2 cups fresh fruit of your choice, cut into bite size pieced

Preparation

  1. Place cashews in a bowl and cover with warm water. Let sit 6 hours or overnight. 
  2. Drain cashews and place in a blender with water, honey, lemon zest and salt; purée until smooth.
  3. In a parfait glass or mason jar, layer fresh fruit, 2 heaping tablespoons cashew cream, more fruit, another 2 tablespoons cashew cream and the rest of the fruit.
