Easy Pancake Recipe With Just Two Ingredients

Hate time-intensive breakfasts? Let us introduce you to the world’s quickest and healthiest pancake recipe ever. With two ingredients (soaked oats and banana) and minimal prep time, you’ll be digging into scrumptious, silver dollar pancakes in no time at all. (Just remember to soak your oats ahead of time.)

While these pancakes aren’t as fluffy as your average short stack since they don’t have flour, they do happen to be completely vegan and gluten-free. Two-Ingredient Easy Pancake Recipe

Serves: 1

Prep time: 8 hours (soaking time)
Cook time: 10 minutes

Ingredients

1/2 cup rolled oats
1/2 cup sliced banana (1/2 an average banana)
2 teaspoons coconut oil or butter

Preparation

  1. Put oats in a bowl. Cover with one inch of water and let soak overnight, or at least eight hours.
  2. Drain the oats thoroughly. Put drained oats in a bowl along with the banana. With an immersion blender, blend ingredients until smooth. (You can also throw the batter in a regular blender.)
  3. Heat a bit of coconut oil or butter in a frying pan or griddle over medium heat. Put a tablespoon-sized amount of batter on the pan to make a silver dollar-sized pancake. When small bubbles form around the outside of the pancake, flip it over and continue to cook the other side until it’s golden. Repeat with the rest of the batter. Top pancakes with maple syrup, fruit, nuts or any other topping.
