These almond butter cookies are are moist, chewy and the perfect combination of sweet and salty. Best of all? They can be whipped up in less than five minutes using ingredients you already have in your pantry. These treats are an excellent substitute for peanut butter cookies if gluten is off the table for you or your guests.

Gluten-Free Almond Butter Cookies Recipe

Serves 12 cookies
Prep time: 5 minutes
Cook time: 10 minutes
Ingredients
1 cup almond butter (crunchy or creamy)
3/4 cup coconut sugar
1 egg, beaten
1 teaspoon vanilla extract
1/4 teaspoon coarse sea salt, plus more for sprinkling
12 whole almonds, for topping
Preparation
- Preheat oven to 350° F. Combine almond butter, coconut sugar, egg, vanilla and salt in a mixing bowl. Stir until the dough is a uniform consistency and pulls from the sides of the bowl.
- Roll the dough into 12 balls and put them on a parchment-lined baking sheet. Gently press each dough ball down with a fork to form a criss-cross pattern. Top with an almond and sprinkle with coarse sea salt.
- Bake for 10 minutes. Remove from the oven and let cool completely on the baking sheet before serving.
