Peanut Butter Cup Protein Bites Recipe

These peanut butter cup protein bites are a step up from the chocolate box. Unlike some store-bought chocolates, which can have traces of toxic metals like lead and cadmium, we use real cocoa powder and cut back on sugar by swapping in coconut flakes and honey. Oatmeal and quinoa offer filling fiber and protein, while flax meal and chia seeds provide heart-loving omega-3 fatty acids. Once you pop, you might not stop so be sure to stick to two balls per serving. You can make these and store them in the refrigerator or freezer for a quick snack to grab and go.

Peanut Butter Cup Protein Bites Recipe

Ingredients

2/3 cup (dry) oatmeal
1/2 cup quinoa, cooked and dried
1/2 cup unsweetened coconut flakes
1/2 cup ground flax seed
2 tablespoons chia seeds
1/4 cup unsweetened cocoa powder
1/4 cup protein powder (vanilla or chocolate)
1/2 cup natural peanut butter
1/3 cup honey
1 teaspoon vanilla extract

Preparation

  1. In a large bowl add oats, quinoa, coconut flakes, flax meal, chia seeds, cocoa powder and protein powder. Mix well to combine.
  2. Add in peanut butter, honey and vanilla. Mix ingredients until they’re well combined and sticking together.
  3. Roll the mixture into balls and lay them on parchment paper to dry a bit.
  4. Place them in an airtight container and store it in the refrigerator.
